Sweetened coconut is just one of the best flavours out there and I am sure you can agree.

This simple truffle recipe will give you this delicious taste along with chocolate all in one.

Perfect to satisfy any sweet tooth with your afternoon coffee.


Servings : 12 truffles

Ingredients : 

3 cups of shredded coconut 

3 tbsp of coconut flour 

1/4 cup coconut cream

2 tbsp of maple syrup 


1/2 tsp of Beauty blend powder for pink color @unicornsuperfoods

1/2 tsp Tropicana powder for orange color @unicornsuperfoods

1/2 tsp açaí powder for violet @iswari


for the chocolate :

1/4 cup coconut oil 

100g dark chocolate chips ( for vegan non dairy )

Method : 

1. Process all ingredients in food processor ( don't add yet the superfood colours ) or in a bowl to make them with your hands hand , (I recommend in food processor so you get the dough firm in the perfect texture) , anyway you prefer to prepare continue processing until well combined and form into equal balls. If you feel that its too dry just keep adding a bit of coconut oil , stay careful not over add , you need to be able to create the balls .

If you want them colourful with superfoods , you should add in the bowl also the desired color, if you desire to make as I did different colours , just divid the Dough to three bowls and process each one .

2. Place the balls aside , you can keep them in the fridge meantime that you are making the chocolate .

3.  In a bowl add the chocolate chips with 3 tbs of coconut oil , cover with a plate and melt in the microwave , remove the plate and let it melt another 20 seconds ( be careful not too burn yourself since the plate will be hot also ), mix with a spatola so the chocolate melts and smooth .

4. Dip the truffles in the melted chocolate , if you want you can sprinkle with superfood powder and let cool on rack.

5. Store in fridge and enjoy as snack.

INGREDIENTS:

•2 cups cooked chickpeas

•2 to 3 medium beets

• 1 or 2 garlic gloves pressed

• 2 TBS salt to taste

•2 TBS Tahini

• Ground cumin

• juice of 1 lemon

• 1/2 cup of water you can also add fresh pepper if you like it a bit spicy (optional)!

👉🏻Method:

Peel the beets, cut them into little pieces, wash them and let them bake for around 45mins in the oven at 200°C. Let them cool down and afterwards place the beetroots, chickpeas and garlic into a food processor or a regular high speed blender and process for 1 minute until ground. Add all the remaining ingredients and process until creamy. It should have some grainy texture, that's ok. If it's dry or you want to thin it out and make it more creamy, add more tahini or water, until you like the consistency.
